I’ve always liked cauliflower, and the first time I tried roasted cauliflower, it was prepared to be served with dinner. The host offered me a taste. Yum! Acting with uncertainty, I convinced her that I needed another taste to be sure if I liked it. Oh, yeah, I liked it! In fact, I loved it! I found myself sneaking small pieces whenever she turned her back, hoping she wouldn’t notice that the plate was beginning to look too big for the cauliflower. I had to stop myself!
Ever since that day, I buy my own cauliflowers just to roast as a snack, and I can easily consume an entire cauliflower myself in an afternoon. It’s so easy to make, just cut the cauliflower into pieces, drizzle ½ - 1 tablespoon of olive oil over the cauliflower along with a sprinkle of salt and your favorite seasoning (optional), then roast the cauliflower at 350° F for about 40 minutes, stirring occasionally. I like to roast the cauliflower until it begins to brown and get a little crispy on the ends. It's crunchy and a little sweet. I’ve served it to kids and adults alike, and it disappears quickly. It’s a great, healthy snack that everyone loves! And the great news is that cauliflower is a good source of protein, thiamin, riboflavin, phosphorous, potassium, vitamin C, vitamin K, vitamin B6, folate, pantothenic acid, and manganese!
