Roasted Cauliflower: One of My Favorite Snacks!

If you’ve never tried it, you probably have no idea how incredibly good roasted cauliflower tastes, and how addicting it can be! I’ve always liked cauliflower, and the first time I tried roasted cauliflower, it was prepared to be served with dinner. The host offered me a taste. Yum! Acting with uncertainty, I convinced her that I needed another taste to be sure if I liked it. Oh, yeah, I liked it! In fact, I loved it! I found myself sneaking small pieces whenever she turned her back, hoping she wouldn’t notice that the plate was beginning to look too big for the cauliflower. I had to stop myself!

Ever since that day, I buy my own cauliflowers just to roast as a snack, and I can easily consume an entire cauliflower myself in an afternoon. It’s so easy to make, just cut the cauliflower into pieces, drizzle ½ - 1 tablespoon of olive oil over the cauliflower along with a sprinkle of salt and your favorite seasoning (optional), then roast the cauliflower at 350° F for about 40 minutes, stirring occasionally. I like to roast the cauliflower until it begins to brown and get a little crispy on the ends. It's crunchy and a little sweet. I’ve served it to kids and adults alike, and it disappears quickly. It’s a great, healthy snack that everyone loves! And the great news is that cauliflower is a good source of protein, thiamin, riboflavin, phosphorous, potassium, vitamin C, vitamin K, vitamin B6, folate, pantothenic acid, and manganese! Try it for yourself. I’ll bet you can’t eat just one piece!
