Before giving up animal-based foods, I used to love egg salad sandwiches. The soft, smooth, rich, creamy texture of the hard boiled eggs all mashed up in mayonnaise with crunchy pieces of diced celery and onions between two slices of bread was so tasty and satisfying. One of the many foods I used to eat that’s now buried in my past.
And then, I came across something even better: chickpea salad! Now, I know that may not sound very exciting, but if you like foods that are creamy, rich, and satisfying, you are going to love this!
