Terri's Signature Green Smoothie

I make this drink EVERY morning or one of the variations! I make it in my Vitamix blender (you can use any blender). I'm sure it's also great as a juice! Be sure to wash all the fruit and vegetables well before blending!

Ingredients:
  • ½ C 100% pomegranate juice (unsweetened)
  • ½ C coconut milk (or water)
  • 1 mini red, orange, or yellow bell pepper
  • 2 small broccoli florets
  • 1 C kale leaves, raw, stems removed
  • 1-2 C green leaves (any combination of kale, spinach, collard greens, swiss chard, romaine, arugula, and/or parsley/cilantro), raw, large stems removed
  • 1 medium apple (I prefer Fuji apples; use your favorite)
  • ¼ lime, skin removed
  • ~ 1” piece of ginger, with skin
  •  ~ 1 C ice

Preparation:
  1. Add all ingredients to the blender in the order listed
  2. Blend on low, and increase the speed until smooth, scraping down the sides as needed. If you’re using a Vitamix with a “Smoothie” setting, use that setting and wait until it runs the entire cycle and turns itself off. 

Makes about 16-18 oz (1 large green smoothie or 2 small green smoothies)


Variations – try adding any of the following:
  • ~1” piece of beet root
  • 2 baby carrots
  • ~ ¼ C cabbage (red or green) or bok choy
  • ~ 1/8 pasilla pepper (this will give it some kick!)
  • 1 small kiwi, skin removed
  • Substitute 1 banana for the apple
  • Any other fruit or vegetables you like!

I love to play with ingredients, so most of these recipes are my own originals or variations on a published recipe. These recipes are all gluten-free unless otherwise noted, in which case gluten-free alternatives are presented. I use lite coconut milk that comes in a can with nothing added except water (no added sugar). Be adventurous, have fun, and give these recipes a try!
