This dessert is simple and quick, and it's unbelievably delicious, smooth and satisfying! When that entire bunch of bananas suddenly begins to turn brown and there's no way to eat them before they go bad, just peel and store two sliced bananas to a baggie in the freezer. That way they're on hand and ready to go when the urge for this awesome dessert strikes!

I found this recipe on the Healthy Bliss website and it's one of the best salads I've ever tasted! This salad is refreshing and light, yet very satisfying! The dressing is creamy and full of flavor! I substituted raw cashews for raw macadamia nuts because that's what I had, and it was great! I also added a diced Granny Smith apple. The best part is that the salad stays crisp for several days if refrigerated in an airtight container, so you can keep going back for more! This is a great make-ahead salad that you can prepare on Sunday and take it to work throughout the week. I created this recipe one night using ingredients I happened to have on hand. It's so easy and so good that it's since become a regular on my dinner menu!
This is a standard that I keep on hand to use instead of meat in many ethnic recipes, or just use cold on a sandwich or in a wrap. The roasted veggies make an excellent filling for tacos, burritos, and enchiladas. Try adding them to your favorite marinara sauce and serve over whole grain pasta or to your favorite Thai or curry sauce and serve over brown rice or quinoa.
This simple recipe reminds me of my Mother's creamed spinach, only without all the artery-clogging cream and cheese. The light coconut milk gives it a very slightly sweet taste. This is excellent served on its own or over brown rice!
